Here I am almost two weeks into my veggie journey. I have to say, that so far it has been easy. I don’t miss meat at all. I eat loads……..and I mean loads of veggies and fruit so I feel content and I’m not having any sugar cravings.
My family has been adapting to the vegan dinners. My husband watched all the food documentaries with me so let’s just say he’s a little spooked. I don’t think he will be giving up meat entirely but he has cut back his consumption. You know, he is Italian and they put Parmesan Cheese on EVERYTHING!!
My youngest daughter already told me that she is sick of chicken……which is good because so was I!! I made bean burgers, eggplant lasagna, broccoli coconut soup, bean chile and to my surprise they ate it…….without complaining 🙂
I made a Vegan Tuscan Bean Soup for dinner last night……I know my husband would of liked to add some pancetta to it……sorry, not happening.
2 cups of cooked white beans
2 celery stalks
1 carton of vegetable stock
1/2 cup tomato sauce
1 cup corn
1 cup cooked quinoa
