I was craving something crunchy and savoury – instead of grabbing for a bag of chip I roasted some chick peas (garbanzo beans)
1 can or chick peas
1/2 cup raw pumpkin seeds
1 TB olive oil
Herb de Provence or favourite spices ( oregano, paprika, curry, whatever blend you enjoy)
I also used fresh rosemary
A few pinches of sea salt
Preheat oven to 375
Use a baking sheet or a pan lined with aluminum foil
Drain can of chick peas and add to bowl
Add half the olive oil, sea salt, and herbs and spices
Mix well to make sure they are all coated
Place on baking sheet and bake for about 10-15 minutes
Add raw pumpkin seeds to the bowl and add the rest of the oil, sea salt and spices and stir to make sure they are all coated
Once chickpeas start browning add the pumpkin seeds to the baking sheet with the chick peas
Stir well and bake for about 10 minutes or until crunchy
Keep an eye on them as they can easily burn
They are a great protein, fibre healthy snack – nothing to feel guilty about. Enjoy!
