Butternut Squash Soup

Just made a yummy butternut squash soup

1 butternut squash cubed
1 chopped onion
2 chopped carrots
1 can coconut milk
3 cups of water
Sea salt
Herb de Provence
1 TB olive oil
Nutmeg (optional)

Add the olive oil to a pot
Sautée the onions until translucent
Add diced carrots and squash
Add some sea salt and herb dr Provence
Sautée for 1-2 minutes
Add the water and coconut milk and bring to a boil.
Turn heat down and cook until squash is soft (test with fork)

Once it is done use a hand held purée mixer or transfer mixture to blender in small batches and purée – it’s ok to have some chinks left for texture

Return to pot and grate some fresh nutmeg (optional ) or store soup ins son jars for further use

Here is mine – I grated a little Parmesan cheese and added some pumpkin seeds (pepitas)

It’s yummy and filling!
