The only time you absolutely should not drink tap water in Rome is if you see a sign that says “ACQUA NON POTABILE”. This will mean that the water is not safe to drink. You will rarely see this though.

You will only see it in bathrooms where the water is only meant to wash your hands, like on trains and airplanes of course.
