I love all kinds of riosotto so I was excited to try the Riso Bello Risotto . My husband is Italian so I have had my fair share of risotto. I was sent the Risotto Pronto and and the Risotto Carnaroli to try out.
I wasn’t sure how my family would like the Risotto Pronto as in their eyes, risotto is not instant risotto. They know it takes a lot of stirring and frankly you can probably build your bicep from all the stirring. To my surprise, I loved it and so did they. We tried the Quattro Formaggi (four cheese) flavoured risotto. It took approximately 12 minutes to cook, it was ready in a flash. We had this as a side dish. It was delicious and creamy just like regular risotto. If I didn’t tell my family that this was instant risotto, they would of never known – it would of been my secret.
Since we had the Riso Bello Risotto Pronto for lunch I decided to use the Risotto Carnaroli as a dessert dish. I love dessert rice dishes. I found this great coconut rice recipe.
- 250grams Arborio rice (2½ cups)
- 1liter coconut milk (4 cups)
- 80grams brown sugar (⅓ cup)
- ¼teaspoons vanilla powder
- Optional: lemon or lime zest
- In a large saucepan, combine all the ingredients and bring to a boil.
- Simmer over moderate heat, stirring frequently, until the rice is tender and the sauce is thick and creamy, about 30-40 minutes.
- Let cool slightly.
- Spoon the risotto into bowls, garnish with toasted coconut or cinnamon, and serve. (recipe from http://alalemon.com)
They were both delicious. I am looking forward to trying the other Risotto Pronto flavours.
