Easy Low Carb Peanut Butter Cookies

You had me at peanut butter!! Who doesn’t love peanut butter cookies? These low carb peanut butter cookies are super easy to make with only 4 ingredients.

Super easy, one bowl, easy clean up low carb peanut butter cookies. Who would have thought that you could eat cookies on a keto or low carb diet? These keto peanut butter cookies are absolutely delicious.

I made these keto peanut butter cookies with monk fruit, also known as Lakanto sugar. This sweetener is made from the Monk fruit extract. The extract is 150 to 200 times sweeter than sugar.  Monk fruit sugar contacts zero calories, zero carbohydrates, zero sodium, and zero fat.

Eating Dessert on Keto Diet

There are so many great low carb dessert recipes to tame your sweet tooth. Most of the low carb recipes usually just substitute the regular flour with coconut flour, almond flour as well as flax meal.

I love that this low-carb peanut butter cookie recipe doesn’t have any flour. Just four simple ingredients that most people already have in their pantry. The monk sugar isn’t really a pantry staple but should be if you are following a low-carb diet or keto diet. You could substitute stevia for monk fruit sugar as well but I find that some stevia has a bitter flavor to it.

Not only are these low-carb peanut butter cookies easy but they are delicious. Your entire family will love them and will not even know that they are low carb cookies.

Ingredients for Low Carb Peanut Butter Cookies

  • 1 cup of peanut butter
  • 1/2 cup monk / Lakanto sugar you can find it at Amazon.ca or Amazon.com
  • 1 egg
  • 1 tsp vanilla extract

Low Carb Peanut Butter Cookie Recipe Directions

Step 2: Combine peanut butter, sweetener, egg, and vanilla extract in a bowl; I mixed the ingredients with a spatula making sure all ingredients are combined well until a dough is formed.

Step 3: Scoop dough into 1-inch balls. You can use a small spoon but I love using these mini cookie scoopers. You can find them on Amazon.ca or Amazon.com. Place on dough on the prepared baking sheet and press down twice with a fork.

Step 4: Bake the cookies in the preheated oven until edges are golden, 12 to 15 minutes. Cool the keto cookies on the baking sheet for 1 minute before removing to a wire rack to cool completely.

  • 1 cup of natural peanut butter (no sugar added)
