Tahini Chocolate Chip Cookies

I have been searching for a healthier version of chocolate chip cookies and came across this tahini chocolate chip cookies recipe. I like that this recipe doesn’t use conventional flour but a nut flour. This original recipe calls for almond flour. We have a nut allergy in the family so I decided to improvise and substitute the almond flour and made my own sunflower seed flour.

To make your own sunflower flour, simply put sunflower seeds in your blender or food processor and blend. I would pulse the blender and keep checking to make sure you are not making sunflower seed butter. If you blend the sunflower seeds too long, they will become sunflower seed butter. We are always looking for a healthier version of delicious recipes. We usually look for recipes that are gluten-free and low in sugar. These cookies are gluten-free, low in sugar and nut-free ( if you use the sunflower seed flour).

I modified this recipe from the 30 Day Hormone Solution book that has the addition of collagen powder. I found this to be an interesting ingredient and thought it was a great way to add some extra protein. I am not sure if the composition of the collagen powder changes when baked but thought it couldn’t hurt. If you don’t have collagen powder you can substitute with a protein powder or simply omit it.

Collagen is the protein is essential for skin elasticity. It also plays a role in joint and bone health. Human bodies create collagen naturally. Over time, however, the production of this protein slows down.

Tahini Chocolate Chip Cookies Ingredients

  • 1 cup sunflower seed flour or 1 cup almond flour
  • 1 tsp baking soda
  • 1 1/2 tbsp collagen powder
  • 1/4 cup monk fruit or sugar
  • 1/2 tsp sea salt
  • 1 cup tahini
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 egg
  • 3/4 cup chocolate chips

Tahini Chocolate Chip Cookies Directions

Step 1: Line a baking sheet with parchment paper and preheat the oven to 350°F.

Step 2: Add the sunflower seed flour, collagen powder, baking soda, sugar and sea salt to a bowl. Mix well.

Step 3: Add the tahini, maple syrup, vanilla and egg to the dry ingredients and mix together.

Step 4: Add the chocolate chips and mix until they are combined.

Step 5: Using a cookie scooper or two spoons, shape the dough into 12 cookies. I actually got 16 cookies using the small cookie scooper. Gently flatten the cookie dough. Leave enough room in between the cookies.

Step 6: Bake in the oven for 12 to 15 minutes.

Step 7: Remove from the oven and let cool for 15 minutes.

Step 8: Enjoy the cookies!

Don’t be alarmed if your cookies turn green inside. If you use sunflower seed flour your cookies will turn green inside. It has something to do with the reaction of sunflower seed flour with the baking soda. They are perfectly fine to eat! You can always substitute for almond flour.
